What is the reason behind engine hunting process ?

When there are fluctuations in the engine rpm it is known as engine hunting. When the quantity of fuel injection per cycle is varied, the abnormal situations occur into the centrifugal governor which lies in fuel injection pump. Therefore variations in speed occur which results in engine hunting.
